The firmest form of fresh tofu is dried tofu. Dried tofu has the lowest moisture content and has the firmness of cooked meat. Dried tofu can be sliced, crumbled, or pressed into forms like noodles. Delicious is a cube of baked crispy tofu that has been sprinkled with sriracha or powdered spice before baking. Noodles can be purchased in packages and then re-hydrated in soups and vegetable casseroles.

How To Cook Your Own Soybeans

Here's how to cook some soybeans for your next big meal.

2 Cups dried beans = 1 pound of beans

About 8 servings.


In a pot, put the beans and water. Start with 6 cups water and add a little more as needed during cooking. Cook beans for 3 or 4 hours until tender. If your beans are very fresh, your cooking time may be less.


For flavor, add all your favorite seasonings, vegetables, or meats that you may like to have in your pot of beans.


You may soak your beans overnight in a pot of water. To do that before cooking will reduce your cooking time when you put it on your stove. Drain the water and rinse the beans. Then put fresh water before you start to cook your beans.
