Fast and Easy Multi Grain Rotini Pasta Salad with Vinaigrette Dressing

Multi Grain Spinach Rotini Salad

Ready in 30 minutes.

Makes 6 servings.

Ingredients

  • 1 lb. Rotini Pasta
  • 1 pint Cherry Tomatoes
  • 1 large Cucumber
  • 1 cup Olives
  • ⅓  or ½ cup Zesty Vinaigrette Dressing (adjusted to taste)
  • 1 or 1 ½ cups cubed Ham or Pepperoni (meat and cheese is optional)

Preparation

  1. Cook Rotini.  Drained and Cooled.
  2. Cut Vegetables. Cherry tomatoes are halved and the cucumber is peeled and  cut into small cubes.Mix Vegetables and Pasta in a large bowl.  Include the olives.
  3. Drizzle Dressing or Pesto.  Toss and mix lightly until coated.
  4. Add your optional ingredients,  Ham or pepperoni or cheese.
  5. Garnish.  Use a fresh sprig on top or a light sprinkle of dried crushed herbs or peppers.

Tips

Quick cool the pasta in an ice water bath and then drain the water.  Sky's the limit on the optional ingredients. Cooked multigrain rotini is delicious with your favorite in season vegetables.  Use your favorite flavor of vinaigrette.  Try this recipe with your own homemade recipe for spinach or basil pesto. Serve over fresh spinach leaves or shredded cabbage.
