 Salmon and Caper Sauce

Salmon is healthful and Delicious!


Salmon steaks are a great way to get through a middle of the week evening meal! It's fast and easy. Packed with valuable Omega 3 fatty acids, you will be set to breeze through the rest of the week. 


Add an extra steak and put it in the refrigerator for tomorrow night fish tacos or carry along lunch at work. Serve that with fruit slices. Coffee or Tea. 


That's a super healthy meal you can put on your diet menu also!!

Ingredients: 
  • 2 steaks of salmon
  • 1/4 lb. butter
  • 1/2 teaspoonful of chopped parsley
  • 1 shallot
  • salt, pepper
  • grated nutmeg to taste
Directions:
Lay the salmon in a baking-dish, place pieces of butter over it, and add the other ingredients, rubbing a little of the seasoning into the fish; baste it frequently; when done, take it out and drain for a minute or two; lay it in a dish, pour caper sauce over it, and serve. Salmon dressed in this way, with tomato sauce, is very delicious. 
Time. About 3/4 hour.
Serve with sliced cucumbers, snow peas, or steamed carrots. 
Garnish with lemon slices and parsley sprigs.

Alternatively, you can boil your fish.

vegetable capers


Here are some nice capers. Capers are often bottled.

Capers make a great choice when adding flavor to recipes.


Caper Sauce

  • 1tsp fish paste
  • 5 Tablespoons large caper fresh or from the jar
  • 1 packed tsp brown sugar or honey or syrup
  • 1 cup port or red wine any is good*
Simmer slowly with all ingredients, add pepper fresh ground to taste and a little bit of garlic or onion. Serve with arugula also if you like.


*Note: The Google snippit said this about red wine; "For the most part, Ports are full-bodied, sweet red wines with notes of berries, caramel, cinnamon, and chocolate. But there are other varieties including dry, semi-dry, white, and rosé varieties. In other words, just as with other types of wines, Port comes in a wonderful variety of styles to suit your tastes." source Google


You can use white wine if you like. It is not necessary to thicken your sauce.


Tip: Any leftover sauce can be used as salad dressing or taco sauce for lunch at work tomorrow.
