Next time you get ready for a few friends 

make macaroni salad!


  Grab a casserole dish. With how much food you may need for a serving per guest in mind, head to the deli grocery or look in the refrigerator to see what kind of flavors you can mix together. Simple flavor ideas may include a recipe made of a simple but very tasty basil pesto or parmesan cheese flavored macaroni salad. Keep in mind how big your party casserole will be.  If you get asked for the recipe, just wink and say “It’s Grandma’s secret recipe”. 


The Steps In This Recipe Are Super Easy 

In a large pot, make up a big batch of pasta salad for only a few dollars, and have plenty left over to eat for lunch during the week. You will save money and look good showing up at the party with a great dish.


Pasta salad is truly one of the easiest meals to prepare. All you need are noodles and salad dressing. You can use pretty much use any salad dressing on the market. All the regulars like balsamic vinaigrette, avocado Cesar or a regular Italian, Ranch, or mayonnaise will work for the coating of your macaroni. Add a sprinkle of chopped parsley or oregano flakes and you are almost done.

To make your macaroni salad look more hearty, you can add chopped vegetables, carrot shreds, or halved cherry tomatoes. If you like meat, some cubed deli meat will taste nice also.
Now for the fun part, the assembly. Cook the noodles, following package directions and then drain. 

Pour the dressing on while the noodles are warm (not hot)  so the noodles will absorb all that good salad dressing flavor.


Look around your kitchen to see if you have any of the following ingredients:
Fresh veggies – carrots, broccoli, green onions
Frozen vegetables – frozen peas are wonderful in pasta salad
Cubed or shredded cheese
Garbanzo beans (also known as Chick Peas)
Black Olives


Toss in whatever you can find. It’s an ‘everything goes’ type of recipe. Bring more dressing with you in case you need to add it later, and voila! You’re done.


If you’re feeling fancy, you can bring some cherry tomatoes, parmesan cheese, bacon bits or sunflower seeds as toppings. It’s all good.

Southern Style Macaroni Salad

This Southern Style Macaroni Salad is a refreshing side for any spring or summer lunch or dinner option. It's so creamy but yet it has the perfect lightness and flavor that will absolutely amaze you! Macaroni Salad Ingredients
2 lbs. Elbow Macaroni (pasta shells of your choice will work)
1.5 - 2 cups Mayonnaise
1.5 - 2 cups Miracle Whip
Paprika for garnish (optional)
Green Onion Tops, Chives, Parsley, or Cilantro for garnish (optional)
2 tsp each Kosher Salt and Fresh ground Pepper
1 (10 oz.) can Light Tuna in water, drained
3 large Eggs, Hard-Boiled
3 Celery Stalks, chopped small
1 large Red or Yellow Onion, diced

Pasta - Boil your pasta in a large pot of salted water. to a boil. Cook pasta (al dente) according to directions on the package. Pour the pasta into strainer to drain water and set aside to cool until ready for use.


Here's another recipe. Simple Macaroni Salad

4 cups uncooked elbow macaroni
1 cup mayonnaise 

¼ cup distilled white vinegar

⅔ cup white sugar

2 ½ tablespoons regular prepared yellow mustard

1 ½ teaspoons salt

½ teaspoon ground black pepper

1 large onion, chopped

2 stalks celery, chopped

1 green bell pepper, seeded and chopped

¼ cup grated carrot

3 tablespoons chopped pimento peppers


Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.

In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight.
